Surrogate Microorganisms for Heat Process Validation

Recent member-funded research has looked to expand the range of suitable surrogates available for validation of antimicrobial processes and to extend the range of food types and applications for which these may be used. 

Comparative inactivation data was determined for the target organisms Salmonella, Listeria monocytogenes, Bacillus cereus and preservative-resistant fungi and for a matrix of candidate surrogate microorganisms. This data provides supporting evidence of the applicability of appropriate surrogates in different food processing scenarios.

The food factory of the future

By 2050, world population is expected to be 9 billion people. The combination of richer diets and increased population means that food production will have to be doubled in the next 30 years.

A Campden BRI seminar, Food factory of the future, to be held on 22 September, will investigate how future food factories will look like and how current issues should be addressed to realise this vision. For more information, and to register, go to the event web page.

Hot topics in microbiology

Keep in touch with current and future microbiological issues affecting the safe production of food, at Campden BRI’s Hot topics in microbiology conference on 13-14 October. This popular event will look at major points of concern, ‘horizon‐scan’ and keep delegates up-to-date with the latest information and understanding.

Food law - make sure you understand it

Make sure you are up to date with current food and drink legislation by attending one of Campden BRI's courses.

Our Weights and Measures course, which deals specifically with the quantity control of food and drink – is on 6 October – details on the weights and measures event web page 

A new course for 2016 – Food law, Food Improvement Agents Package – on 9 November, takes a close look at food additives, enzymes and flavourings – details on the FIAP event page

And there is an extra date, because of high demand, for our US Food and Drink Labelling course – 22 November. This will help those wishing to export to the USA understand the labelling requirements necessary to avoid misbranding errors and generate compliant labels for the United States.
